Hi, I’m Pam.

Originally from Venezuela, I was raised in a multicultural family with Italian heritage before spending time living in Europe and eventually making Australia home more than twelve years ago. Those experiences have shaped not only who I am, but also the flavours, traditions and love of sharing that inspire my baking today.

Before discovering my passion for baking, I studied Physiotherapy and worked in geriatric rehabilitation. Caring for people taught me patience, attention to detail and the importance of making meaningful connections, qualities that I carry with me in everything I create.

You might have seen me on Season 9 of The Great Australian Bake Off, but my story began long before the cameras, in my own kitchen, where a love of baking slowly grew into Bake + Sway.

Motherhood gave me the opportunity to slow down, embrace creativity and discover a passion that completely changed the direction of my life. What started as a creative outlet soon became the place where I felt most at home.

The name Bake + Sway couldn’t be more personal. Music is always playing in my kitchen, and before I know it, I’m dancing, swaying and smiling my way through mixing bowls and cake batter. That feeling of joy is at the heart of everything I create, and it’s something I hope you’ll experience through every recipe, cake and tutorial I share. I truly believe baking should be just as enjoyable as the moment you take that very first bite.

I love creating cakes that are every bit as beautiful on the inside as they are on the outside, but my love of baking extends far beyond cakes. From breads and pastries to cookies and desserts, I’m passionate about developing recipes that honour the classics while adding my own touch. Above all, I love helping others discover the confidence and joy that baking can bring.

Being a contestant on The Great Australian Bake Off was one of the greatest highlights of my journey. It challenged me creatively, introduced me to extraordinary people and reaffirmed what I love most about baking: bringing people together, sharing knowledge and creating moments worth remembering.

Today, Bake + Sway is more than celebration cakes. It’s a place where I share recipes, cake decorating, baking inspiration and the lessons I’ve learned along the way. My hope is that whether you’re baking your very first cake or your hundredth loaf of bread, you’ll feel inspired to step into the kitchen, turn up the music and enjoy the process.
